80 day Obsession VEGAN SHOPPING LIST

This 80- day workout program is getting people AMAZING results! Not only does it help you gain control of your portion sizes, but there are 80 different workouts to complete! Each day is different and so the challenge continues as you build strength and stamina through all 3 phases!

The meal plan is simple to follow and gives you a list of foods that you get to CHOOSE from! To determine how much of each food category you need to eat each day, you simply do the calculations in the nutrition guide that is provided online, and it will tell you which plan to follow and how many containers of each category you need to fulfill your body's caloric need.

My favorite simple vegan burritos

These vegan burritos are a favorite of mine and my daughter's! I have had many people ask me for the recipe I use so I figured this was the easiest way to share it. (Sorry I looked for a picture and found I do NOT have one!) I will take one and post it next time I make these!

Step 1: Make the Tomotillo Ranch Dressing
Mix in blender:
3-4 tomatillos
1 cup Just mayo (or other vegan mayo)
1/2 bunch cilantro (stems and all)
1 Tbsp lime juice
2 tsp dried dill
1/4 tsp minced garlic
1/2 tsp garlic salt
1/2 tsp onion powder
1/2 to 1 whole jalapeño sliced and seeded
Blend in blender and let sit in fridge.

Step 2: Make the Cilantro Lime Quinoa Rice
I use my rice cooker and just put everything in together
7 cups water
1 cup white rice
I cup brown rice
1 cup quinoa
1 can diced green chilies
1 Tbsp lime juice
1/2 to 3/4 bunch chopped cilantro
4 cloves garlic minced
1/2 tsp garlic salt
1/2 onion chopped or 1/2 tsp onion powder
Cook in rice cooker

Step 3: Make the Beans and Corn Mixture
1 can drained (or 2 cups precooked) black beans
1 can drained (or 2 cups precooked) pinto beans
1 tsp cumin
1/2 tsp paprika
1/4 tsp coriander
2 tsp taco seasoning
1 tsp Bragg Liquid Aminos
Heat together in sauce pan over medium-high heat then add 1 can (or 2 cups) drained sweet corn. Mix well.

Layer on tortilla: bean mixture, rice mixture and a handfull of leafy greens (spinach, romaine, or green leaf lettuce work great). Top with tomatillo ranch and close tortilla! Enjoy!

If we don't know where we are going, how will we get there?

 Alright, I admit it: I am not fearless.
I let fear stop me from doing something HUGE that I was once very passionate about.
I once had dreams so big that they scared me and instead of pursuing them, I let my fear stop me.
I feared success and the difficulty it would take to get there.
I lacked courage and I gave up something I loved.
I made excuses to quit and I tried to blame others for my lack of consistency and drive.
I stopped setting goals.
I let myself become full of excuses as to why I didn't need to take care of myself.
I gained weight and became weak mentally, physically and spiritually.
I went into survival mode and tried to hide from the world.
I stopped reaching out and building relationships.
I unfriended many people so I didn't have to see their success, because their success only made me feel worse.
I still cared about people, but I stopped showing people I cared.
I made mistakes.
I learned that happiness doesn't just come naturally, you have to pursue it CONTINUALLY!















I realized that time will pass no matter what and if you change nothing, nothing changes.
DECISIONS DETERMINE DESTINY.
I don't want to live my life with regrets of giving up something that had once given me so much hope.
To me, hope is what gives me a brighter outlook on life! It is what motivates me to become better!
It is what pushes me to progress and show others what is possible!
In sharing hope with others, I can serve as an inspiration and light in a world filled with darkness.

This is why I have decided to restart my progress.
This is why I am back to setting goals for myself.
I have experienced a life without goals and there was no progress made.
Of course I still love my family and always cared for my children, but nothing else changed.
It is frustrating to go from a life of major progress and improvement, to a life without that.
Love can only take us so far, but when we mix LOVE with PASSION and HOPE, we can become unstoppable!

High five to a life of progress and hope!
